Iranian cuisine is primarily the art of cooking rice. And "art" is not a big word here: the most refined risotto will seem barbaric compared three techniques for cooking rice Persian (Tchelo, polo Kateh) each designed to accompany a certain type of dish (with sauce in broth, roast ... khoresh, ash, polo, kabab ...)

Then comes the subtle harmony between the meat (lamb, beef, duck ...) and the key element of the dish (which can go quince with eggplant, barberry to cherry through the grenade and dried limes) without forgetting the herbs and spices (coriander, mint, dill and especially the precious saffron).

But Behnam and Nazanin you speak better than me on Saturday night!
